To celebrate Utah’s Pioneer holiday, I bottled apricots and made freezer jam for the majority of the day! I say it was a perfect way to celebrate it, doing what pioneers did best! I was given a few boxes of apricots and they were going ripe fast so we had to get them done. I was able to go over to my mother-in-laws house and bottle them. The kids had fun sorting out the good ones from the “squishy” ones which helped us out of bunch! I was able to put up two batches of bottled apricots and some jam. After doing all that work, we we were able to enjoy a dutch oven meal of potatoes, chicken, and peach cobbler. It was delicious!

After dinner, Grandpa let the kids go through the jungle (corn patch) and explore. They had a blast running through it and pretending. It was so much fun watching them. It brought back memories of when I used to do that at my grandparents house when I was a kid! They also had so much fun that day playing with their aunts and doing lots of fun things together.
